I just recently started brewing and so far I am using hopped LME. Starting with the easy ways and building up. I've tried adding things to the kits but that has been the extent so far.
 
Welcome :)
You could switch to doing boils with unhoped LME and pellet hops.
Then, when you are comfortable with that, add in some specialty grains.
 
I have a can on Muntons American Style Light that I'm thinking of splitting in thirds and experimenting in my Mr Beer. 1st batch per instructions, 2nd batch with some blackberries and 3rd batch...undecided. I Split a Bock kit in 3 before and found that brown sugar adds a nice bit of depth to the kit. I cinnamon stick adds a bit too much.
