Don't get your panties in a bunch, I didn't say, "Buffalo."

1/2 - 3/4 cup water (depending on how strong you like the lemon flavor)
Juice of 1 lemon
1 Tbsp mustard (Dijon or whatever floats your boat)
1 Tbsp corn starch
Dash salt
Hot sauce to taste
Freshly ground white/black pepper to taste

Whisk all ingredients together. Bring to a simmer over medium heat until just thickened. Serve immediately over chicken wings cooked to your liking. Fried wings are always good, but baking or grilling works, too. I often make mine in a 300 degree charcoal smoker - dust 'em with a sweet rub and toss in a small chunk of pecan/apple wood. Makes enough sauce for 1-2 dozen wings.
