I plan on brewing the following recipes from Beersmith.com and already have the ingredients. However my wife really wanted something with an orange hint to it. What are your thoughts about replacing oranges with the lime or lemon?

8.0 oz Caramel/Crystal Malt - 60L (60.0 SRM)
3 lbs Extra Light Dry Extract (3.0 SRM)
3 lbs Wheat Dry Extract (8.0 SRM)
2.0 oz Tettnang [4.0%] - Boil 45 min
2.00 Lemon Peel/Juice (Boil 45 min)
1.0 oz Tettnang [4.0%] - Boil 5 min
1 pkgs Edme Ale Yeast (Edme #-)

1 lbs Caramel/Crystal Malt - 40L (40.0 SRM)
3 lbs Extra Light Dry Extract (3.0 SRM)
3 lbs Wheat Dry Extract (8.0 SRM)
2.0 oz Cascade [6.4%] - Boil 45 min
1.00 tsp Irish Moss (Boil 15 min)
3.00 Lime Peel/Juice (Boil 10 min)
1.0 oz Cascade [6.4%] - Boil 5 min
1 pkgs Dry Ale Yeast (Nottingham #)

Bottled:
OktoBierfest
Bavarian Bronze

Or even peach? She is drinking O'Fallon Wheach which you won't know of unless you live around St. Louis, but she loves it.

Use the zest, just the colored portion, not the white pith. About 1.5 oz should be good. You could also try some crushed coriander seed, about .4 oz.....crush some and see what you think of the aroma, it's kind of an orange spicy addition. Tangerine peel works just as well. I have no idea about peach.

Thanks for the info. In your oppinion, with these ingredients can I just replace one fruit with another? I was worried mainly with the hop/fruit relationship. Still learning and wasn't sure if certain hops work better with certain fruit, or if some hop/fruit combos absolutely won't work.

Again, thanks for your help
