My first beer is officially fermenting and after one day the blow-off tube and bucket are brown with foam deposits. Should I change the water in the blow-off bucket? If so do I need to put sanitized solution or can I just use fresh water? Or should I ditch the tube altogether and just put in an airlock now that the fermentation has calmed down a bit?

You don't need to change the water and if you no longer have foam running through the tube, switch to an airlock.
