During fermentation should my Mead be covered, placed in a dark room and kept at room temp ???
 
keep it covered preferably with an airlock. dark room is good. room temp should be ok, basement temps this time of year can be kind of cool in your area.
 
Temperature of the fermenting mead should be within the listed range for the yeast. Once fermentation is finished, it can be moved to a cooler spot. A place that also has a more stable temperature range is best. Typically that's a basement.
