I sampled the straight mead from Bardic Wells and was pretty impressed. It was a bit thicker and sweeter than I expected, after trying their cyser. Is this what I can expect from my own mead, using a simple recipe?
 
The character and body of a mead is dependand on 3 equal pieces.
The type and quality of honey used (commercial mead is usually Orange Blossom?)
The Type of yeast used.
The method of production. (No heat, heat, boil...etc)

So taking those 3 factors into consideration, and given enough time...You should be able to make something similar, and very enjoyable. Many mead makers find that they love the mead that they make, and do not particularly even like most commercial meads that are available to them.

"Simple" mead is often referred to as a "SHOW" Mead
