help on recipe - create and revise

I'm new to homebrewing and i'm not at the stage yet to revise/create recipes.

2 questions I needed help with:

1. i'm making 5gal batches and i wanted to use up the ingredients i have left from my last couple of brews (all grain).

i currently have:
2lbs Belgian Pils
1.5lbs Biscuit
1.5lbs Aromatic
2lbs Maris otter
2lbs Caramel 40
2lbs Caramel 80
2 lbs Chocolate malt

Anything I can make with the above ingredients for 5/4/3 Gallons? No too picky on the style.

I will buy some additional hops.



2. I'm also making a Centennial IPA
the recipe i'm using consists of 11.5lbs Belgian Pilsner malt, 2.5lbs Caravienne, 0.5lbs Biscuit and 0.5lbs Aromatic. then you use 3 ounces of Centennial hops adding at different times in the boil - 0min/15min/30min/45min/55min and 60 min.

question is i have about 2 ounces of citra and motueka leftover - can i use these and if so how much and when should i add them...if i use them do i then decrease the amount of centennial hops??
 
I got you on this. A golden English bitter.
3 gallons
2lbs each of pils and Maris Otter
0.5 lb each of crystal40 and biscuit
0.25lb each of chocolate malt and sugar
hop with 3/4oz EKG at 60
1oz Fuggle at 10 and 0.25oz EKG at 5
 
Fantastic, I'm very glad you like the sound of it. Just the thought made me go and crack a bottle;)
