I've used honey to sweeten my cider's before but have never done a straight mead.

My only paramater is that I would like it to finish slightly sweet if possible, although I can backsweeten if necessary. It will be a 1 gallon batch.

How much honey should I use per gallon?
What kind of SG do I want?
Any yeast recommendations?
I assume pectic enzyme is not necessary for honey?

Do a search for Ancient Orange Mead on this forum. It uses bread yeast so it doesn't ferment out dry--finishes sweet. I'm planning to chuck some honey into the grocery cart this week so I can start a gallon before Labor Day.
