Just purchased this book, love all the recipe ideas. What I can't seem to find is a description of when to add the extract for his recipes. Are these recipes designed for late extract addition?
 
No. Since his recipes are for full 7 gallon boils to start, there isn't any mention of late extract additions.

You could do it though, especially if you're doing an under-7 gallon boil.
 
Was there not something mentioned in the first part of the book? It wasn't specific to the recipes but more of a general practice. I don't have the book in front me otherwise I'd be more specific.
 
It is explained in the first parts (or maybe it is an appendix). The parts written by Palmer. His basic approach is to recommends adding as much extract at the beginning to reach the given pre-boil OG in the recipes. So, if you are doing a full boil, you add it all at the beginning.
