hi, what are the drawback of an all grain bill such as this?? I know in large quantities, wheat can get stuck sparge, but if you mix the 2 50/50 would this happen?? i don't know much about pilsener malt.

i'm planning a pale ale, with a little bit of carapils, cos thats what i do with most recipes...

thi9nking about splitting the batch half US-05 and half Pilsener ?Yeast.

Any advice, for a relatively new brewer?

That would be a witbier. The Belgians have done that for many centuries.

With wheat you always run the chance of a stick sparge, but I've never had one myself, and I use 60/40 wheat to pils for my hefs. You may want to do a 90 minute boil. That'll get rid of the DMS from the pilsner malt. I personally like pilsner malt and use it as a base most of the time.
