I am about to do my first extract and hops beer, a variant of the All Amarillo IPA from this website (changing the main hop to centennial, which I can get in Japan).

My stupid noob question is this: when I add hops at flamedown, how much time should I leave those hops in before straining into the plastic bucket and adding cold water? Seems like they would be in for less than a minute. Is that enough time?

With a wort chiller, I leave them in until the wort has cooled. In your case, I would give them a minute or maybe even put them in the strainer. Like a hop-back.
