In an all grain recipe how does boiling longer than the going average of 60 mins. effect the beer...and what is trying to be achieved by boiling longer?
 
If it's pilsner malt you want to do 90 minute boils for sure. Other than that, sometimes if you over sparge and need to boil down I do it. Other than that, you really don't get much of a difference with the hop utilization from 60-90 minutes.
