So I brewed a all grain batch of heather ale, loosely based on the AHS fraoch clone free of hops, and what I got was a bit unexpected.

I think I know where the strangeness is coming from, and this is tasting a sample as I was kegging - it had a bit of sweetness to it, and yet a sour bite. It kind of reminded me of a cider.

The grain bill was
8.25 lbs Marris Otter
1.00 Cara Pils
.5 lb Crystal 20
.5 lb Crystal 40
.13 Chocolate Malt
4 lbs honey added in the last 10 minuets of the boil
2 gm Sweet Gale @ 15 min
8 oz Heather tips @ 60 min
8 oz heather tips @ 1 min
Whitle Labs WLP028 Edinburgh Ale

Now my final gravity was much higher than what beersmith said it should be. It was supposed to finish at 1.021, and it actually came in at 1.032.

That would explain the sweetness, but the citrus/cider/bitter thing. I have to wonder if that was the sweet gale.

Anyone else try a heather ale?
