First year hop questions

So I planted 4 cascade rhizomes this early spring and they are doing great. They look ready to pick, but I don't know when to pick them. I also want to use them to make Tej Mead. So here are my questions :

When do you pick Cascades?

How many hops are good to use to make Tej?

I picked mine yesterday and i'm in ill.
i got a decent yield off of my one vine, so i'm happy...
you typically pick them when they have a papery feel and if you crush them, there will be plenty of the orange powery stuff... not to mention they will smell delicious.
