OK, brwwing a wheat ale. Actually the boil is done. But I only have 3 yeasts on hand and all are dry yeasts.

Coopers Ale

Nottingham

Windsor.


Thinking the nottingham or the windsor. Not sure which would be better.

Windsor is sweeter and yeasty (low floc) where the nottingham is dryer and highly flocculent.

Need to know within the hour.
