I'm planning on doing an extract (sorry) hybrid chocolate/oatmeal stout. I'd like to use about a pound or so of flaked oats. Do I need to mash the flaked oats, or can I steep them with the grains? Thanks.

Yeah, can't do it with a specialty grain + extract brew.

However, this may be a perfect time to start learning partial mashes. A partial mash should have enough enzymes to allow conversion of the oats - at least it did the first time I did it. Eventually it lead me to all grain!

Partial mashing is a great way to take the training wheels off but still have a bit of a security blanket by using a few lbs of malt extract.
