I broke a thermometer while steeping grains during one of my batches and had to dump it. I have 5# of Extra Pale LME that I was going to toss but after some reading I found that people use even older LME. I think I should be ok using it for starters even though its old and its not Extra Light LME.

What quantity should I use for a starter?

Old LME is fine for starter as long as it isn't growing mold or something. Use enough for an OG of around 1.035. Read the starter tutorial on mrmalty.com.
