Oatwine recipe - please critique

If you would indulge me please... I'm playing with the idea of brewing an oatwine. The dream reults would be a thick, chewey, milkshake of a beer at 12-14%ABV.

This is my first time creating my own recipe. Feel free to rip it to shreds! There's a reason I'm posting here before I brew. Also, to avoid the question... I plan on using the champaigne yeast because I like the flavor, not just for the high alcohol tolerance.

Recipe Type: All Grain
Yeast: Premier Cuvee
Yeast Starter: Slurry
Batch Size (Gallons): 5.0
Primary Fermentation (# of Days & Temp): 28
Secondary Fermentation (# of Days & Temp): 28
Tasting Notes: Hope to achieve... Sweet, thick, alcoholic
