I have a co2 set up to carbonate two kegs at the same time. I have been carbing one keg at 15 psi for about a week and then put another keg on to carbonate. Usually takes about two weeks to carbonate so if the first one is done do I take it off the co2 until the second one is fully carbonated? I don't want to overcarbonate.

At a given temperature, beer will only absorb so much CO2. Once it reaches that point of equilibrium it's never going to change, so there's no real need to disconnect a carbed keg from your CO2 system.

Indeed, we all rely on that phenomenon with every keg sitting in our keezers and kegerators. If they kept absorbing gas we'd all be screwed ;)

Cheers!
