I had only let myself try one beer a month to see how it was going. Last month was OK but very phenolic. I was a little worried because this was an extract batch and I hadn't filtered the top-off water....It was also my 1st attempt at a starter and it wasn't very succesful.

Today I cheated and cracked one 10 days early (~3.5 months). Got out the goblet, and BAM-it finally smells like a Belgian!Take a taste-the phenolic has really faded and it's just sweet and fruity-then a bit malty-then dry. Pretty stoked that it finally has that trademark taste/smell...still going to try to let them sit, but it's encouraging to know that (to my untrained taste) this stuff is awful similar to those pricey 4-packs out there...and I've got 2 cases of it!
