I am trying my hand at a "honey" porter. Did I overlook anything really stupid?:drunk: The williamettes at the end are just there because I have them on hand. I am trying to stay with european ingredients except for the willamettes.

I've never used it but based on many opinions I've seen you might want to cut back on the honey malt, maybe to half that amount. Williamette is derived from Fuggles so you are fine with that choice.

+1 on BigEd. Only 2/3 of your grain bill is base malt. I would cut the honey malt and the Munich back by half each and add more pale (3/4 pound) and maybe a hair more chocolate (1/4 pound). Otherwise good.

+1 also on the hops comment.

It looks like it will taste good - nice full body with the 154F mash. I was going to recommend WLP002 for its low attenuation, but with all of the Crystal, Honey, and Munich malt, that might be overkill.

Good luck.

Based on recommendations from Bearcat and BigEd, I am going to leave the hops as is and change the grain bill to:

8.50 lb Pale Malt (2 Row) UK (3.0 SRM) Grain
0.50 lb Honey Malt (25.0 SRM) Grain
0.50 lb Munich Malt - 20L (20.0 SRM) Grain
0.50 lb Caramel/Crystal Malt - 40L (40.0 SRM) Grain
0.50 lb Caramel/Crystal Malt - 80L (80.0 SRM) Grain
0.75 lb Chocolate Malt (350.0 SRM) Grain
0.25 lb Black (Patent) Malt (500.0 SRM) Grain

This gives me an estimated OG of 1.055 SRM 33 IBUs 36
Any problems with these changes?
