Hello,
My only real experience with cider is making edworts apfelwein, and I really enjoyed it.
I want to dig deeper and learn more about cider craft. Not just the ingredients, but process considerations etc.
For instance, should I be monitoring my fermentation temp with this kind of yeast? Do I need to think about adding nutrition? it seem like apples might have alot less amino acids etc..
Can anyone recommend a book or two where I can start? I would like a few reference ranging from cultural/history to science/practice
