Saaz in a Kolsch?

I'm out of Spalt and don't want to run to the LHBS. Worth a try or not?

Here's what I have in house.

Saaz
Centennial
Custer
Cascade
Amarillo
Willamette
Simcoe
Perle
 
My vote is to bitter with the Perle and finish with the Saaz - might be interesting to do a very small amount of willamette for flavor. The willamette will be along the lines of a SS Goldings flavor addition. The Saaz will give it a great finish ...
