Any help? Hopefully will get something from my first year cascades and brew a all cascade IPA.
 
i just tapped my all-cascade IPA. it's awesome.

i brew ag, beersmith converted it PM. both versions are posted.

You don't have to mash for 90 minutes- 60 is more than enough.

Add the strike water (about 11 degrees higher than your desired mash temp) and then stir in the grain well. I like to use 1.5 quarts of water per pound of grain. Keep it at 152-154 (I personally think 150 is too low on an APA) for 45-60 minutes. Sparge by rinsing the grains with up to .5 gallons of 170 degree water (or up to your boil volume).

That PM conversion looks weird to me. Why the big cut in the crystal malt, for example?

I'd keep all of the grains the same and just change up the two row slightly, depending on how much you can mash.

Like this:
2.00 lb Vienna Malt (Weyermann) (3.0 SRM) Grain 15.38 %
1.00 lb Caramel Malt - 40L (Briess) (40.0 SRM) Grain 7.69 %
0.50 lb Caramel Malt - 20L (Briess) (20.0 SRM) Grain 3.85 %

Plus 6 pounds DME.

Or:
2.00 lb Vienna Malt
1.00 lb Caramel Malt - 40L

quick response yoop, I just did my first year cascade harvest so I'm going to double the dry hops used and only do it for a week since I feel more than a week I run into grassy flavors. Yours is a pale and this is an IPA but they are so close I wanted to know what you feel it is closer to?
 
I'm a bit of a style nazi- I wouldn't call a 1.064 beer with 1.5 pounds of crystal and Vienna malt an IPA. Looks like a tasty hoppy APA to me. It's a wee bit higher in IBUs and OG than APA guidelines indicate, but the crystal will soften those IBUs and make it more balanced than an IPA.

maybe I'll pump up the bittering addition to counter that then, I'm really not the biggest apa fan for some reason, I prefer the bitterness.

what exactly is out of style for IPA? 1.064 is dead-center of BJCP range, as is IBU's.

Is 10% crystal really that much? low and long mash made it very dry.

Well, I think ANY crystal is too much in an IPA, so I'm probably not the one to ask! :D

Seriously, I'd go no higher than about 5% in an IPA. Sure, your OG and IBUs are in the IPA range, but the perception of bitterness and "hoppiness" may be quite a bit less. If I were judging the beer, I don't know that I'd be able to discern it as an IPA vs. an APA because of the crystal offsetting the perceptible bitterness. The Vienna malt will give it more maltiness, too, and a perception of depth.

I think it looks like a very tasty beer- don't get me wrong! I think it's more of a higher OG APA than an IPA, that's all I mean.

yooper FTW, but any input on a solid cascade ipa?
 
fair enough.

bjcp has:

"Malt flavor should be low to medium, and is generally clean and malty sweet although some caramel or toasty flavors are acceptable at low levels"

so i'll keep calling it an IPA.
