Small batch mead recipe suggestions

Hey guys, I've never made mead before but I have 3 lbs of honey leftover from a beer recipe so I thought that would be a good way to dabble in the meadmaking arts.

I was thinking of a one gallon recipe using the 3 lbs of honey. I understand I need some sort of acid or tannin in the recipe for balance, so does anyone know how I might incorporate green tea and lime in the recipe? Thanks!
 
Im makin one with added vanilla pod and cinnamon to the must with no tannin but now i dnt remember adding acid... Uh oh! Iv used champagne yeast so maybe wil b ok
 
Well, you've enough honey for a 1 gallon batch, so maybe a base traditional, then some lime and green tea in secondary.......

Of course, you could just put some of both in primary.

Personally I add tannin and acid too taste, before bottling.....
