Hello all,

I've finally switched over to the wonderful world of kegging and I have a question. I made a homebrew that had a lot of hops in it and after about 6 months or so in secondary I racked to a corny and CO2 system that I recently bought. Within the first 24 hours after carbonating it seemed really over-bitter and I was tempted to throw it out but now after a couple days it seems to have mellowed and now is very drinkable.

My question is I'm a little confused. I just didn't think force carbonating would really change the flavor profile (like bottle conditioning).

Anybody else have a similar experience???????

Thanks!

I think what you were tasting at first is carbonic acid from force carbonating. That "bite" is harsh. Now that the co2 is in solution in the beer, though, it's mellowed out.
