I got a great deal on some buckets from a food processing plant. They are obviously food grade with tight, gasket-fitted lids for just $.50 each!

I was planning on tripling my production when I realized that plant produces mostly processed cheese. What are the chances all these buckets have lacto? Or is the lacto used for cheese different than the lacto that sours beer?

Processed cheese? That stuff is just emulsified oil. Regular cheese may or may not have bacteria in it. Regardless, if you clean the buckets well (i.e. oxyclean and very hot water followed by starsan) you'll be fine.

You have lacto on your skin so when you touch your fermenters, they have lacto. Do a good job of cleaning the buckets and sanitizing them and you'll be fine.
