Hi all, I'm trying to use Kai's spreadsheet and I have a question.

Where it says "Grain 1 extract potential(80% is default)" do I use the air dry or fine crush data from the malt fact sheet?

For example:

Weyermann Wheat Malt Pale
Moisture content: 4,8%
Extract (air dry): 80,5%
Extract fine crush: 84,6%

Do I use 80,5 or 84,6 in that field?

I took a look at the "detailed calculations" tab in Kai's spreadsheet. He's expecting you to use the dry basis fine grind potential value (should be the highest potential on the spec sheet.) He adjusts for moisture content to calculate the "as-is" potential.
