I have Birch Beer extract. I tried the whole deal where you put it in sugar water and add champagne yeast, I wasnt too thrilled. Is there a way I could add it to a beer recipe? Maybe a red ale?

If it doesn't have fermentables you could just add it to taste when you bottle/keg. I would do a sample on a glass of beer before adding it to the whole batch though. Good luck.
 
Check out the Joy of Homebrewing, Mr Papazian has a couple of recipes for spruce beer. Maybe try one of those.
