This afternoon, I fixed a dinner that turned out really well, using parchment paper. I took a rainbow trout fillet, salt, pepper, olive oil, lemon juice, thinly sliced yellow onion, green onion, and red bell pepper (diced), folded the parchment paper over, so it was closed. Put the "package" on a a cookie sheet and into a 450 overn. I did four of these packages at once. Cooked for about 25 minutes, put each package on a plate, cut the package open down the center. It was moist, fragrant and delicious.

Sides were rustic mashed potatoes and a salad.
 
I usually cook Salmon fillets (less than 1" thick) for about 15-20 minutes at maybe 400°F. But, I use Al foil. You might be able to get away with less time and have a more tender dish.
