howdy folks...

Please give me your insights on this recipe. I'm testing the "late hopping" method and using Simcoe for the first time. I recently had a local brew pub's Simcoe Ale that was very tasty. The brewmaster would not give me specifics because he "hadn't perfected the recipe yet." He did say he used MO and lots of Simcoe. I'm hoping for a medium gravity beer nicely balanced between malty and hoppy (medium bitterness with emphasis on flavor & aroma.)

12 lbs. Marris Otter
mash 60 mins. @ 154*
.5 oz. Simcoe (12.7%) @ 20 min.
.5 oz. Simcoe (12.7%) @ 15 min.
1 oz. Simcoe (12.7%) @ 5 min.
1 oz. Simcoe (12.7%) @ 0 min.
1 oz. Simcoe (12.7%) dry
Safale 04 @ 68* for 14 days
Keg condition 14 days @ 10PSI @45*

Beer Alchemy gives me the following assuming 70% efficiency on a 5 gal. batch:

Boil Volume 6.5 gals.
Final volume 5.5 gals.
60 min. boil
OG 1.055
FG 1.014
ABV 5.4%
IBU 34.9 (Tinseth)
 
Looks good to me! I would maybe First Wort Hop with an once of simcoe. FWH will give a smooth bitterness and help the aroma. Other than that it looks good.I am going to do something very close to what you got. I love Simcoe!
 
I have a Munton's Simcoe partial mash smash going right now
very similar hop rate. can't wait for that one to get done so I can bottle, age and drink!

smelled great in the kettle!
