Hi there, I just had a quick q...I'm thinking of leaving my primary for 12 days this time, any problems with that? Just a work schedulling thing this time around.. Its oatmeal stout in the bucket, put it togeather tuesday, will tsfr next saturday..
Thanks

Honestly, I rarely move to secondary before two weeks. Doesn't hurt the beer, and I always seem to be busy the following weekend. You only have to start worrying about autolysis when you start measuring time in months, not weeks.

Right on. And I think Papazian even says 3 weeks isn't worth cryin' about. I try to move mine after that 2 week period though. I left one of my belgians on a cake for 3 weeks, and it totally picked up a yeasty flavor. Since then, I rarely leave them sitting around in primary for more than 2 weeks.
