Conical fermenting

So I just finished an AG brew 3 days ago and put it into my conical and pitched my yeast. It was a Belgian Wit. I have 2 questions, first how long should I ferment for, I was thinkin 3 - 4 weeks. Second, how long should I wait to drain the sediment outta the bottom of it. Also, once I drain it, should I continue to drain every couple days of just one good drain is enough? Any help would be appreciated.
 
Ferment 1-2 weeks.

Drain the junk out after a day or two. Otherwise it gets more solid and harder to remove.
Then every few days. Save the middle runnings as the white yeast cells start falling out
of suspension.

Age for a few weeks then enjoy it.

BTW, Stainless or plastic conical ?

Bottles, kegs, pail, or yes in the conical. Though you probably will want to brew something else and have that conical empty for the next brew.
