Wouldn't that make it more like a pre-distilled Mezcal or pulque?

It's a very different thing than honey. You can ferment it, but you won't get mead out of it. Agave is extremely sweet and every time I've fermented it alone it has a fairly pronounced tartness. A bit of it in a mead with honey can be nice, but otherwise not really to my taste on its own.
