Heat rock for fermentation chamber

Would a reptile heat rock work as a heat source for a 5 cubic foot fermentation chamber? I am using a fan right now and it heats up the chamber too much so that the freezer kicks on, it has a thermostat but will not kick the fan on at lower temps. I don't really want to go the light bulb route
 
A reptile heat rock probably wouldn't work because it has a built-in switch that shuts it off when it's surface temperature reaches about 100 F. They are small and don't store that much energy.

Something like this would probably be a lot better (variable wattage soldering pen):
