This is my first sour. It was a wheat base that I fermented out with Brett C, I pitched the dregs from a couple bottles of cantillon at ~ 3 months and I added 3# of cherry puree at ~4months. Now it has been ~9 months total. It developed a pellicle soon after pitching the cantillon dregs. The pellicile has always been sort of patchy and never covered the whole surface, recently though it became thicker and looks like it made a second layer.
I sampled it one a couple of months ago and it was good but very funky.
Is this normal? Is it okay to push through the pellicle to take more samples?

That's the way mine looked when it first started forming. Give it time to cover the surface and don't disturb it.

There is no "normal" when it comes to pellicles. They are thicker when there is more oxygen in the headspace, so it probably just means you've been doing a good job keeping the airlock filled and not pulling samples too often.

I've never had an issue disturbing pellicles, I pull samples every few months with a thief and it has never caused an issue. It is more of a concern in a porous oak barrel, but even then it hasn’t caused the production of any vinegar flavors (which I hate).

Oh good, I was hoping that would be the response, I wanted to pulls some samples to test with family at christmas.
