Question about which yeast to use

I'm making a Cherry Wheat this weekend. The recipe I have says to use an American Ale yeast.

However, I've seen other recipes that use Wheat Yeast.

Which one shoudl I use??
 
I would use Safale US05. It's a great neutral yeast (wont impart any flavors on its own) it works great, its cheap and readily available.
 
US-05 DOES work great for yeasts.

A wheat yeast is probably referring to a hefeweizen yeast which throws a lot of banana/clove esters...which would probably conflict with and muddle the crisp cherry.

Even Nottingham would work out great. If you really want the Cherry Flavor to dominate and almost eliminate ester production, Nottingham at <65&#730;*will do wonders.
 
what's your recipe? what sort of taste are you shooting for?

60 minute boil (full boil) 5 gallon batch
4 lbs Wheat LME
2 lbs light DME
1 oz Willamette pellet hops (~4.8 Alpha) at the start of the boil
Wyeast American Ale/Chico yeast
Ferment @ 65 degrees primary 3-5 days then rack onto cherries in secondary
Add 3 cans Oregon Brand Red Tart Cherries (they are sterile) in secondary FV for 7-10 days adjust liquid with sterile water for 5.5 gallons.

This is what I'm doing for my next brew.
