- Very clean, light on the hops, perfect session beer and crowd pleaser
As much as I like my Summer Citrus Wheat, I think this one is better and is cheaper to make. It uses German noble hops for a clean and dry bittering that really compliments the Wyeast 1010 American Wheat yeast strain. Carbed up to about 2.4vols this has a great carbonic bite, very light hop character, and a clean finish. It's a great session beer and is a welcome companion to anything you're doing outside in the 100 degree summer heat! This recipe is for an 11 gallon batch, and I chose to pitch Kolsch yeast in one carboy and Wheat in the other just for kicks.

Mash Schedule and Fermentation
Mash @ 150F for 75 minutes (light body)
Ferment @ 65F for 7 days, 70F for 7 days
Kegged @ 2 weeks, then chilled to 37F. Carb @ 30psi for 36 hours, then reduce pressure to 10psi for serving. Let condition for another 1 week, then enjoy!
