How fine of a filter do you need in order to remove yeast from a batch? I have a double filter but don't know how fine of filter medium I should use.

Trick question. Is the filter absolute or not? I typically filter @ 5 microns but as mentioned above that does allow some yeast through. 1 Micron should get the bulk of the yeast and if you really want to be sure run it through a .5 micron.

All that being said when filtering you are removing flavor and possibly color the finer you go.

I understand you are removing flavor and color the finer you go. The problem I have is I made a semi sweet cider using potassium sorbate. But it decided to start fermenting again in the keg so I decided since I have the filtering equipment to try back sweetening it one more time.
