Rewarawara and leatherwood honey?

The honeybee center is where I got it, in Langley, bc. They have lots of specialty honeys they say are unpastuerized, I got to do a tasting as I really wanted to do a gallon of traditional with a nice flavourful honey. I settled on a Tasmanian leatherwood honey, but ended up picking up some rewarawara honey that had accidentally been carmelized for cheap. The plain rewarawara was delicious, but I really like the hint of carmelization, and it was half price :)
