I recently obtained a 55 gal ss fermenter. The question: How small a batch of wort can I ferment with the 55 gal capacity? Would it even matter if the fermentation gives off enough CO2 to replace the O2? Thanks.

if the fermentation produces enough CO2 to push out 55 gal (minus the wort volume) of O2 then i don't think it really matters. but really you have 55 gallons of space ... why not make 50 gallons of beer?

Unfortunately, I cannot always produce 50 gallons...working towards that, however.
