The day I got married, following our wedding reception, we visited the Hopcat in Grand Rapids, MI. As we were still in wedding apparel, our waitress wanted to help us celebrate and treated me to this beer. Naturally, I'd like to make something close for at home since Lagunitas isn't selling the stuff anymore.
So....knowing only that it is "wheatyesque," OG 1.076, ABV 7.3%, IBU 64.20, color pale/golden, moderately caramelly, and filled with American-style hops (many mention grapefruit in the flavor), I'm gonna give it a shot:
82% Efficiency
72.4% AA
5.25 Gallons
6.5 lbs 2-Row
6 lbs White Wheat
1 lb Crystal 40L
Mash 154F for 60 Min
1 oz Simcoe (13%) 60 min
1 oz Cascade (6%) 5 min
1 oz Amarillo (8%) 5 min
Ferment at 65F (finishing at 70F) with 2 packets S-04
Any suggestions to help me get closer?
