I have my first stout planned out. I just want to run it by you guys/gals to see if anyone can see any problems with it.

This is a 5 Gallon Recipe. OG is 1.098, TG is 1.025, 35 SRM, Alcohol 9.79%, IBU 69.5. 330kcal per 12 oz.

Grains for steeping:
.5lbs Belgion Chocolate Malt
.5lbs Caramel Malt 120L
.5lbs Black Barley
.5lbs 6-Row Brewers
.25lbs American Black Patent

Extracts and Adjuncts:
5lbs Dry Light Extract
3lbs Dark Dry Extract
1.5lbs Lactose (added late)
.5lbs Mollases

Hops:
3oz Fuggle (4.8%) 60 minutes
2oz Hallertau Hersbuck (4.5%) 15 minutes
.5lbs Bakers Chocolate 10 minutes
4 oz Mint Leaves (peppermint) in secondary.

I've never made a stout before and I want this to be ready for winter season.

That is going to be one malty beer. I would push your IBUs up to at least 70 to get it anywhere close to balanced.

For some reason I originally read that as 1oz of Fuggles and 1oz of Hallertau, which sounded way under hopped to me, but I see he has the IBUs listed at almost 70 and no actual amounts listed for hops.
