Some friends of mine have graciously given me 2.5 lbs of Willamette hops from thier garden. Issue is, they had them picked and sitting in a box for a week before I could pick them up and bring them home to dry them. When I did pick them up, they were brown but still smelled great and I am in the process of drying them out and vac-sealing them. Will they add an off taste since they were not the bright green I usually use?

As long as they smell good, should be ok.
So what about a grassy smell after drying? Did I dry too much?

If they've a grassy smell they were probably picked too early.
