I am going to start naturally carbing kegs but wanted to first make sure im not going to mess anything up. How do these steps look?

1. add 2.5 oz corn sugar / 5 gal batch
2. purge with co2
3. seal with 12 psi co2
4. let sit for 3 weeks.

Do I have to have a valve hooked up to blow off extra co2 if the pressure builds to much or just seal and let sit?

I would just treat it like a big bottle of beer. Add a 1/3 cup of corn sugar to keg boiled in a cup of water. Then pressurize to 5 psi, leaving the pressure on for two days.. Store at 70 deg. for seven days. -Koz
