im going to make an octoberfest,can i brew it as a ale with a wyeast 1003,and if i do will the 1003 make it have to much of a malty finish .please help.your beer bud bull.:mug:
 
I'm not familiar with wyeast 1003, but I just brewed an oktoberfest as an ale with Safale S-04 and it tastes pretty good. Nice and malty like it should be
 
I used WLP001, and that worked out great.

Whichever ale yeast you use, choose one that is "clean" tasting and neutral. If you can ferment at the low end of the yeast's temperature range, that will help keep it clean and crisp, too.
 
cool, thanks for the input ,the wyeast 1003 is supposed to be a strain that has a malty finish,was just wondering if the yeast by having a malty overtone on its own ,would add to much malt flavor , thanks again ,your beer bud bull
