Hey, everyone. I brewed this oameal stout last week and pitched it with American Ale II yeast. It went big for a couple of days then subsided and I replaced my blow-off tube with the air lock.... now, after a week, it's going big again and filling the lock with schmutz, and I'm putting the blow tube back on.

Anyone know what causes the lag? My ferm temp is consistent at 60-64 deg.

Thanks, -p

Is it possible that your temperature (for whatever reason) dipped below 60? That yeast's lowest recommended temperature is 60 degrees. If your temperature drops, the yeast become less active.

Steve, nah, that's what is weird about this... and it's still blasting! I honestly can't figure this out... smells good though. -p
