Scotch ale receipe?

I'm on an all grain setup, so I can do a mash or extract. My welding friend who helped with my stand, seems to have a gluten issue. Looking for a scotch ale style recipe and tips?
 
this has perked my interest! any ideas out there for a scotch ale.
i dont know what you have for AG. but i recently acquired 10# of med and 10# of dark roasted chestnuts. [link]http://www.chestnuttrails.com/products/beer-chestnut-chips-5lb[/link] and ive got quinoa that i can roast up.

getting it nice and dark would be a challenge

would this need toasted oak chips and what kind of hop profile?
 
as long as the whiskey (scotch, whiskey, burbon. generally same thing from different region) is straight. and not sour mash it should be alright. sour mash have a small amount of the mash mixed in with the final product. but if the whiskey is just distilled its fine as the distillation process does not transfer gluten.
