Using 6.5 gallon fermentor for 3 gal ice wine?

Is that too much head space? I have 5 gallon carboys but don't know that I'll be able to stir enough. First time with the wine and any help is appreciated. I do have a 3 gallon carboy for the secondary though. Thanks!
 
Head space doesn't matter in primary. Many use an open bucket. The primary fermentation gives off enough co2 to protect the must. Those active yeast need some oxygen anyways.
