Ok, we all know patience is very important when it comes to this. But, my question is, how long after bottling should I wait to drink the beer. Here is what I know so far

- will depend on beer/yeast (how much does it depend?)
- generally carbonation will be established within 1 week

Of course you can drink it whenever, but how long could you expect (a Wit for example) to need to sit in a bottle before is no longer tastes "green"?
 
Generally, the lower the ABV the sooner it is ready to drink. A Wit might be good to go once carbonated, ditto a low gravity Brown or Mild.
 
Almost any bottled beer will be more or less ready to go after a week if you just can't wait. But the best bottle in almost any batch is the last one.
